Guanciale is an Italian cured meat product prepared from pork jowl or cheeks. Where as this is the American version in the fact it is not only cured but also smoked over hickory and sliced thick. You use it the same as you do for traditional bacon and it is hard to tell the difference in taste compared to traditional bacon.
